The Process

Preheat your oven to 375 degrees. Line 12 muffin tins with paper liners and spray with cooking spray.

In a bowl, combine elderberries and brown sugar until elderberries are coated. Add in one cup of flour and baking soda and mix well to combine ingredients. Then add ½ teaspoon of cinnamon into the mixture; stir again to distribute spices evenly throughout batter Mix wet ingredients together: oil, eggs, vanilla extract Pour this mixture into elderberry batter and stir until elderberries are well-distributed throughout the mixture. 

Add in the remaining flour to elderberry muffin mix, a half cup at a time while stirring after each addition. Fold in two tablespoons of cold butter or margarine by hand Pour your elderberry muffin batter into 12 paper-lined jumbo muffin cups. Mix a remaining teaspoon of cinnamon with two teaspoons of sugar and sprinkle on top elderberry muffins. Bake for 15-20 minutes or until elderberries are plump and tops turn brown
